用途：增稠劑；穩定劑；乳化劑；懸混劑；膠凝劑；粘結劑。
卡拉膠性質
● 溶解性：不溶於冷水,但可溶脹成膠塊狀,不溶於有機溶劑，易溶於熱水成半透明的膠體溶液(在70℃以上熱水中溶解速度提高；
● 膠凝性：在鉀離子存在下能生成熱可逆凝膠；
● 增稠性：濃度低時形成低粘度的溶膠,接近牛頓流體，濃度升高形成高粘度溶膠，則呈非牛頓流體。
● 協同性：與刺槐豆膠、魔芋膠、黃原膠等膠體產生協同作用，能提高凝膠的彈性和保水性；
限量：GB2760-2011，稀奶油，黃油和濃縮黃油，生濕麵製品（如麵條、餃子皮、混沌皮、燒麥皮），香辛料類，果蔬汁（漿）按生產需要適量使用。生乾麵製品 8.0g/kg，其它糖和糖漿（如紅糖、赤砂糖-槭樹糖漿）5.0g/kg
