緊結乃味之源,茶頭乃普洱茶中難得茶品。一噸的熟茶堆子中才能產生幾十公斤茶頭!
老茶頭,也叫自然沱,是曬青毛茶中比較肥嫩的芽葉,由於嫩度高,果膠含量高,在熟茶的渥堆發酵過程中,自然捲曲或糾結成塊,形成了茶頭。陳年茶頭緊結,發酵充分,非常耐泡,為熟茶中精華,口感湯色極佳!「緊結」是味道之源!清朝阮福在《普洱茶記》中就談到:「疙瘩茶,味最釅」這裡的疙瘩茶,說的就是茶頭啦!
老茶頭是在普洱茶渥堆發酵過程中,發酵充分,而使茶膠質結晶成塊,無法解散而形成的「茶疙瘩」,形狀、大小不等。如果茶葉等級高,那麼茶頭的價格不菲,茶頭的特點是湯色如紅酒,透亮,滋味純厚,帶陳味,口感特別甘甜潤滑,相當耐泡。
茶頭的沖泡跟其它的茶是有所區別的:茶頭內質豐富,凝結的緊,醒茶、出湯的時間都要稍微長些。
第一道洗茶:投量按照標準投5g左右,第一道茶水棄去(泡1分鐘秒左右),稱之為洗茶,目的是洗去一些灰塵和雜質;
第二道醒茶,喚醒茶性,深悶(30到40秒鐘),茶水棄去;
第三泡開始品飲,浸泡時間在5秒鐘左右,之後亦然。到味淡後(20泡以後)可以適當延長出湯時間,根據口感而定。
