β- 胡蘿蔔素

β-胡蘿蔔素是一種廣泛存在於綠色和黃色蔬菜，水果中的天然類胡蘿蔔素。β-胡蘿蔔素由4個異戊二烯雙鍵首尾相連而成，屬四萜類化合物，在分子的兩端各有1 個β-紫蘿酮環，中心斷裂可產生2 個維生素A 分子，有多個雙鍵且雙鍵之間共軛。分子具有長的共軛雙鍵生色團，因而具有光吸收的性質，使其顯黃色。β-胡蘿蔔素主要有全反式，9-順式，13-順式及15-順式4 種形式。β-胡蘿蔔素有20 余種異構體，不溶於水，微溶於植物油，在脂肪族和芳香族的烴中有中等溶解性，易溶於氯仿，化學性質不穩定，易在光照和加熱時發生氧化反應。

β—胡蘿蔔素作為一種食用油溶性色素，其本身的顏色因濃度的差異，可涵蓋由紅色至黃色的所有色系，因此受到食品業相當熱烈的歡迎。其適合油性產品及蛋白質性產品的開發，如：人造奶油、膠囊、魚漿煉製品、素食產品、速食麵的調色等。而經過微膠囊處理的β—胡蘿蔔素，可轉化為水溶性色素，食品可應用。另外，β—胡蘿蔔素在飼料、化妝品等方面有重要用途
